Ham and Egg Crescent Bake

Ingredients
1 8 oz. can Pillsbury crescent dinner rolls
4 eggs
1 C. diced cooked ham, diced
1/4 C. red bell pepper, chopped
1 C. Monterey Jack cheese, shredded

Directions
Separate or cut dough into 2 long rectangles. Press rectangles in bottom and 1/2 inch up sides of ungreased 12x8-inch (2-quart) glass baking dish (if using crescent rolls, press perforations to seal).

In bowl, beat eggs; pour into dough-lined pan. Top with ham, bell pepper and cheese.

Bake at 375 degrees 15 to 20 minutes.



My Grandma's Ham Tomato and Shells

This is comfort food at it's best for me, my grandmama used to make this whenever we had ham!!

Ham, Tomato and Shells

2 cups cooked ham
1 13.25 oz box pasta shells
2 cans stewed tomatoes
I also kept the ham bone from a ham we had cooked (this is how grandmama did it)
Place tomatoes, ham and ham bone in a large pot and cover with water. Bring to a boil and add pasta shells, cooking until done. Simple, easy, and oh so yummy! This brings back a lot of memories that just make me :)

DIY Marbled Ornaments

Items needed:
Clear glass ornaments
Crayons
Hair Dryer
A glove(it gets hot!)

Break the crayons of your color choice into small pieces...drop in bulb, heat with hair dryer and swirl until completely coated. Simple, cute!!!

I tried the cheaper crayons, but I found crayola melts the best.

DIY Acrylic Paint Ornaments


What you need:
clear ornaments
acrylic paint

Remove top of ornament
Holding ornament at an angle, squeeze acrylic paint into ornament until you see a stripe down the side to the bottom.
Turn ornament 45 degrees and repeat.
Do the same with other colors you may want to add, get creative but most of all have fun!
Fill in any blank spots on the ornament by tipping it so that the accumulated paint at the bottom fills in the gaps.
Place ornament upside down to dry for 24 hours before replacing ornament hanger, an empty egg carton or smaller styrofoam cup works well for this.
I like the crayon ones better but we loved these as well!! 

Melted Snowman Ornament

You will need:

Clear Ornament
Epsom Salt
A few whole cloves
orange construction paper for nose

Add epsom salt, about half full, drop in remaining items..and he is ready to put on the tree



Candy Cane Puppy Chow


Ingredients
5 cups Chex cereal (I like the rice one best)
10 ounces of Andes Peppermint Baking Chips 
1 cup powdered sugar
6 large peppermint candy canes, crushed
Instructions
Melt the Andes Peppermint Baking Chips in the microwave in a large glass bowl in 20-30 second intervals on half power, stirring between each interval until full melted.
Pour the Chex Cereal into the bowl and stir and fold the cereal and melted baking chips until fully coated.
In a large zip top baggie, pour in the powdered sugar and the crushed candy canes.
Pour in the coated chex cereal.
Seal the baggie and shake vigorously until all the cereal is coated with the sugar and candy canes.
It can keep up to 2 weeks in a sealed container at room temperature!




My update

Yes, it's me!!

The picture on the left is me at my heaviest weight, the middle one is when I started Skinny Fiber and the one on the right was today!! I was always overweight growing up. I got married in 1986 and then got pregnant with my child shortly thereafter. I was hefty before, then I gained 60lbs during my pregnancy. After giving birth to my son, I continued to add the weight on. Well, in 1992 I finally decided I was gonna have to do something about my weight. I went on a low-fat diet and began to walk each day. I lost a 100lbs within a year of doing so. In 2002 I went through a horrible divorce (after being married for 16 yrs) so I ended up working two jobs to support me and my son, that left no time for exercise or eating healthy. I began a new relationship in 2005, from 2006-2011 it was a very TOXIC relationship LOADED with STRESS. Of course most of you know that stress ...will work either two ways, lose weight or gain weight, my stressed caused me to gain weight. Plus getting older makes it even harder to lose weight. I had a horrible car accident in 2006 which almost took my arm off. Thank GOD everyday that he saved it for me. But that accident added to the stress as well, it left a huge scar on my arm that took me time to accept. I had to do a reality check, be thankful for what I do have and able to have 90% use of it with a huge scar than not to have it at all. In Jan of 2012, I met the love of my life. Candy Christmas Sleds

Items needed:
Kit Kat regular sized bars
Candy Canes
Hershey Mini's, (I used the Christmas Edition)
Ribbon and bows
Hot glue gun, two glue sticks

Mark two lines on the bottom of the Kit Kat bars, this is where you will attach the Candy Canes. Run a line of hot glue on your marks and attach the candy canes, do this one at a time and let them set up for a minute.

Put a drop of hot glue on the edges of the Hershey Mini's wrappers and attach them to the sled bottom, you will stack them 4, then 3, then 2, then 1. Let this set up for a minute.

Tie a pretty piece of ribbon around the sled, and tape the ends to the bottom of the sled, (don't use hot glue on the ribbon~~ don't ask)
Add a ribbon to the top!! Viola~~ a cute and edible gift!!

Rudolph Hot Cocoa Cones

Ingredients
Hot Chocolate mix (I used the individual packets I had on and, and I used 2 packets per cone)
Chocolate Chips 
Miniature Marshmallows 
brown pipe cleaners/fuzzy sticks (whatever you want to call them)
red or brown poms (I use the red for Rudolph)
googly eyes
12" piping bag

Pour enough hot chocolate mix in piping bag for 2 )in my case I used two packets), then add chocolate chips and marshmallows. Use the brown pipe cleaners to tie around the top and shape into a bow or upwards to resemble antlers. Glue googly eyes and nose on them! i'm going to do a little tag with instructions on it and give them out to the kiddos in my life for an early Christmas treat! 



Cornucopia



Using a sugar cone, dip the tip (1-1 1/2 inches) in warm water for about 20 seconds. Then microwave for 20 seconds. 

Roll the warm, moistened end around a clean pencil and hold for 20 seconds.

Voila...Mini Cornucopias:) Fill with whatever you like, use as a place card... Be creative!
I used fall peanut M&M's then a small piece of plastic wrap and a piece of twine.

Caramel Apple Cupcakes

these do take a while, but are SO worth it!


For the Cupcakes You will need:
3 Cups flour
1 Cup Sugar
1 Cup Brown Sugar
1 tsp Baking Soda
1 tsp Salt
1 TBsp. cinnamon
3 Eggs
3/4 cup vegetable oil
3/4 cup Sour Cream
2 tsp vanilla
2 cups of peeled, chopped apples
Pre heat oven to 350 and put your cupcake liners in pans
*Combine dry ingredients: flour, sugar, brown sugar, baking soda, salt and cinnamon.
*Add wet ingredients : eggs, vegt. oil, sour cream and vanilla.
using a wire whisk mix well
*Add your chopped apples
*Fill your cupcakes liners about 2/3 full
*Bake 18-22 min.... insert toothpick to check if done
*Let cupcakes cool for 5 min. in pan then finish cooling on a wire rack
*Frost with Caramel Buttercream when cool

For The Icing:
1 stick of butter
1 cup brown sugar
1/3 cup of heavy whipping cream
3 1/2 cups of powdered sugar
*Melt butter over med heat
*Stir in brown sugar and heavy cream...stir over med heat till sugar dissolves approx 2 min.
*Pour in mixing bowl
*Add powdered sugar a cup at a time..mix with electric mixer
*Frost cupcakes...to make dome look use an offset spatula to frost...put frosting in center and pull downward

Caramel Glaze
1 14 oz pkge of Kraft Caramels
2/3 cup of half-and-half
*Microwave caramels and half and half on high for 3 to 4 min. until caramels are melted... stir after each min.
*Allow caramel to cool for 1 -2 mn.
*Dip Frosted cupcake into bowl of caramel

To Garnish
I used shisk a bob sticks or you could use popsicle sticks
Sprinkles
Candy Corn
Chopped nuts or pecans
Or whatever your heart desires
I tied a piece of rafia around each stick but you could use ribbon and even put them in a treat bag and tie a ribbon on each one
* I would do one cupcake at a time on garnishing...dip it in your caramel and top with desired garnish....then do your next one...

Crock Pot Creamy Italian Chicken

Crock Pot Creamy Italian Chicken 

2 lbs boneless, skinless chicken tenderloins, thawed
1 package dry italian seasoning
1 can reduced fat cream of chicken soup
1/2 cup water
1 8oz package fat free cream cheese, cubed

Place chicken tenders in bottom of crock pot Mix together dressing mix, soup and water and pour over chicken. Cook on low for 4-5 hours and then add the cream cheese. Let cook until cream cheese is melted. I served over Smart Taste penne pasta, but this was so good you can eat it by itself if you would like.
Makes 6 servings. Approx 191 calories, 2 g of fat and 4 WWP+

Pumpkin Crumble Pie

Ingredients:
For Pumpkin Pie:
· 1 15 oz. can pumpkin puree (not pumpkin pie filling)
· 3 large eggs, lightly beaten
· 12 oz. evaporated milk
· 1/3 cup firmly-packed brown sugar
· 1/4 cup maple syrup
· 1 1/2 tsp. pumpkin pie spice
· 1 9-inch deep-dish frozen pie crust, thawed
Maple Crumb Topping:
· 1/2 cup all-purpose flour
· 1/2 cup firmly-packed brown sugar
· 6 Tbsp. cold butter
· 1 Tbsp. cinnamon
· 2 Tbsp. maple syrup
Instructions:
Preheat oven to 350 degrees F.
In a large bowl, mix pumpkin, eggs, evaporated milk,
brown sugar, maple syrup and pumpkin pie spice. Mix well, and pour into thawed crust.
Place pumpkin pie on a baking sheet, and bake 20 minutes. While your pie is baking, make the crumb topping:
Combine flour, sugar, butter and cinnamon, mix until mixture becomes crumbly.
Do not overmix, or the mixture will turn into a dough. You just want chunks of crumbly goodness.
Remove pumpkin pie from oven. Sprinkle crumb topping over pie. Drizzle with maple syrup.
Bake another 35-40 minutes, until crust and crumb topping are golden brown. Let pumpkin pie cool completely before cutting.
Drizzle with maple syrup before serving

Granny Smith Apple Pie Treats

Awesome! Awesome! Not as hard as it looks!!
3 Granny Smith Apples - please wash the apples before you start~~cut the tops off, and core out. Careful here, don't cut thru the apple skin.
Fill the cored out apples with lemon water, 1 tablespoon lemon juice to a full glass of water ~ keeps them from turning brown.
I used a small can of Country Apple pie mix, added a little more cinnamon and apple pie spices until I liked the flavor~ your tastes may be different.
Dump the water out of the apples, just shake it off, fill the apple with the mixture. Set aside for a few minutes, while you make the lattice top.
I used one Pillsbury pie crust, rolled it out and sliced a few thin long strands. ( Let the pie crust come to room temperature before you roll it out)
Basket weave across the tops, leave a little hanging over the edges, when your done with the lattice, press the edges you left hanging to the apple.
I sprinkled a little cinnamon and sugar on the top. Bake at 375 for 25 minutes, your oven may be different.
Some people use an egg wash on the lattice, but as fast as these cooked I was worried the tops would brown to quickly. You are looking for a nice browned top and the apple to look a little transparent. 25 minutes was perfect in my oven.
Kitchen notes: I had extra pie filling and extra pie crust left over. I rolled it out thin and put the rest of the apple mixture in it and rolled it up jelly roll style, cooked it right along with the apples, sliced it in thin pieces for bit sized treats. Waste not, want not!

Cake Batter Pancakes


Ingredients:
1 cup Original Bisquick mix
1 cup Funfetti cake mix
2 tablespoons candy sprinkles
1 cup of milk
1 teaspoon vanilla
2 eggs
Glaze:
2 1/2 cups of powdered sugar
3 tablespoons + 2 teaspoons of milk
1 teaspoon vanilla
Directions:
~Mix all of the glaze ingredients together & stir until smooth & creamy & set aside
~Mix all of the ingredients for the pancake mix except for the sprinkles . I used an electric mixer to be sure batter was smooth. Once batter is smooth add your sprinkles & just stir in.
~Spray Pam very lightly into your heated skillet & then pour 1/4 cupfuls of batter into skillet & cook until golden brown on both sides.
~Remove from skillet & immediately drizzle your glaze on top & add a few extra sprinkles on top.
These are so good & something different from the usual pancake

Cinnamon Pancake Stack

Ingredients:
for the Pancakes:
4 cups all-purpose flour
8 tsps baking powder
1 tsp. salt
2 cups milk
2 cups water
4 tbsps canola oil
4 large eggs, lightly beaten
for the Cinnamon Filling
1 cup butter, melted (200gm)
1 1/2 cup brown sugar, packed
2 tbsp ground cinnamon
for the Cream Cheese Glaze
1/2 cup butter (100gm)
4 oz. cream cheese
1 1/2 cups sugar
1 tsp. vanilla essence
Directions:
To make the Cinnamon Filling:
Mix the three ingredients together. Place in a disposable piping bag and snip the end off or put in a Ziploc bag and snip the corner off.
To make the Pancakes:
Mix the dry ingredients in one bowl and the wet ingredients in another bowl. Stir them together until everything is moistened leaving a few lumps.
Heat your griddle/pan to exactly what temperature you want but not to high or you could burn the cinnamon. You don't want these too cook too quickly.
Pour desired amount of mixture onto girdle or pan. cook for a few seconds to seal the base before adding the cinnamon mixture. Using the piping bag and starting at the center of the pancake, create a cinnamon swirl. Wait until the pancake has lots of bubble before you try to turn it. You will find that when you turn it the cinnamon swirl will melt. The cinnamon will melt out and create the craters which the cream cheese glaze will fill.
To make the Cream Cheese Glaze:
In a microwave safe bowl melt the butter and cream cheese and then stir together. Whisk in the powdered sugar and vanilla. Add a little milk if needed to make
it a glaze consistency.
Place pancake on plate, then cover with cream cheese glaze. keep doing this until you have run out of pancakes. pour cream cheese glaze over the top when finished.


Heavenly Orange Chip Scones

Ingredients:
4 cups all purpose flour
1 cup granulated sugar
4 teaspoons baking soda
1 tablespoon grated navel Orange peel
1 cup (2sticks) unsalted butter Cut into pieces and softened
1 cup buttermilk
3 large eggs
1 teaspoon orange extract
1 tablespoon milk
1/2 teaspoon salt
1 cup of nestle tolhouse semisweet chocolate mini morsels
1 cup golden raisins
Icing ingredients
Combine 2cups powdered sugar
1 quater cup orange juice
1 tablespoon grated orange peel
1 teaspoon orange extract
In a medium bowl, mix till smooth
Preheat oven 350
Lightly grease baking sheet. Combine flour, sugar, baking powder, baking soda and salt in a bowl. Add morsels, raisins and peels and mix well. Cut in butter w pastry blender or 2 knives till mixture resembles corse crumbs. Combine buttermilk 2 eggs and orange extract in a small bowl, then pour buttermilk mixture to the flour mixture just until a sticky dough is formed. DO NOT OVER MIX. Drop by one fourth cup fuls onto prepared baking sheets. Combine remaining egg mixture on top of dough.
Bake for 18-22 mins or until toothpicks inserted come out clean. Bake one baking sheet at a time. Cool on wire racks for 10 mins. Drizzle scones w icing. Serve warm. And enjoy!!!!

Apple Pecan Crisp

1 Cup Chopped Pecan
1 cup brown sugar
1 cup rolled oats
1 cup all-purpose flour
1/2 cup butter, melted
4 cups apples - peeled, cored and chopped
2 teaspoons ground cinnamon
Drizzle a little caramel syrup on top.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease 2 8-inch round pans.
In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Do this in each pan-->Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture. Then top each pie with chopped pecans.
Bake in the preheated oven for 40 to 45 minutes, or until golden brown. Don't forget to drizzle the caramel on top when its done.

Cheese Onion and Bacon Rolls


Scone mix:
4 cups flour
4 tsp baking powder
25gm butter melted
water to mix.
Sift flour and baking powder. Stir in melted butter and water until a stiff dough.
Halve the mixture and roll out into a rectangle.
Filling:
2 slices bacon - chopped
1 onion - chopped
1 cup grated cheese
Put the filling on the scone dough and roll up width ways. cut into 1 inch slices and place on oven tray. Sprinkle with grated cheese.
Bake 200C for approximately 15 mins or until golden brown

Stuffed Chicken Breasts


INGREDIENTS:
4 skinless, boneless chicken breast pounded to 1/2 inch thickness
salt and pepper to taste
1 (15 ounce) container ricotta cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
8 Asparagus tips
1 clove garlic, minced
2 eggs, beaten
1 (8 ounce) package shredded
mozzarella cheese, divided
1 (16 ounce) jar spaghetti sauce
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, combine the ricotta, spinach, garlic, eggs and 3/4 of the cheese. Mix well.
3. Season chicken breasts with salt and pepper to taste. Lay the chicken breasts out on a clean surface, and spoon 1/4 of the spinach mixture onto each one, place 2 asparagus spears on top. Roll up chicken to enclose the spinach and asparagus. Secure with toothpicks, and arrange in a shallow baking dish.
4. Pour sauce over all and sprinkle with remaining cheese.
5. Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes, or until chicken is cooked through.

Ingredients are:
1 cup brown sugar
1/2 cup granulated sugar
1-1/2 cups corn syrup
1-1/2 cups peanut butter (I always throw more in, I love PB)
6 cups corn flakes (you can also use rice krispies)
12 oz. pkg. semisweet chocolate chips
12 oz. pkg. butterscotch chips
So in a big pot (because even the cereal will go in) heat the corn syrup and sugars till a slow boil, add in the PB, and just till smooth, you don't want it to burn, stirring all the time... when mixture is smother stir in cereal till coated... press into a buttered cookie sheet... and then when cooled, microwave the chips till melted and top!! SO delicious! =]

Confetti Cake Batter Cheesecake Bars

Ingredients:
1 Box of Funfetti cake mix
3 Eggs
1 Stick of butter (Softened)
1-8 oz pkg of Cream Cheese (Softened)
1 teaspoon of vanilla extract
Directions:
*Pre-heat oven to 350 degrees
*Very lightly spray pam on bottom of 9X13 cake pan
*In a large bowl mix box of funfetti cake mix, stick of softened butter, Separate 1 cup of mix for later.
*In a medium bowl beat together package of cream cheese, 3 eggs & teaspoon of vanilla extract until smooth & creamy. Pour in and mix together with the cake mix
Pour into pan and Sprinkle the 1 cup of cake mix you set aside on the top.
Bake at 350 degrees for approx. 25 minutes. May require a little more baking time if center is still gooey and sticks to knife when checked. When it’s done Let cool and then cut into squares and enjoy!


Hoasie Rolls (New Mexico Style)

2 cups flour, 1/2 cup shredded cheddar cheese, 1/4 tsp salt, 1 pkg yeast or 2 1/4 tsp yeast in a jar, 3-5 tablespoons chopped green chile, ( I used fresh roasted and peeled chile), 2 1/2 tsp sugar, 1 cup warm water, 1/2 tsp onion powder, 1/2 tsp garlic powder, 3 tbls veggie oil, or olive oil.

Fill a large mixing bowl with hot water to warm the bowl. Pre heat your oven to 350 degrees. I pre measure everything in small bowls to have it all ready. Dump hot water out of the bowl, put one cup warm water
(between 110 -115 degrees) in the pre warmed bowl, add yeast and salt, stir gently to dissolve yeast. Let this sit for about two minutes. Add sugar, gently stir, add seasonings, stir again, add green chile and cheddar cheese, stir until well mixed. Start adding flour, I add about a quarter cup at a time and continue to mix, keep adding flour until bread starts to form. Knead 20 times to mix all flour into the mixture. Grab a cast iron skillet, add 3 tbls oil to the skillet and warm it up, just to the point it is warm to the touch. Form 9 golf ball sized rolls, roll them once over in the oil in the skillet and place an even distance apart in the skillet. Cover with a tea towel and let the rise 30 to 40 minutes. Bake at 350 for 30 to 35 minutes. These are excellent with a pot of stew or a bowl of beans! Enjoy!


Easy Shrimp Salad

Ingredients:
1 to 1 1/2 lbs large Cooked Shrimp (each on cut in half)
1 whole Avocado cut in Chunks
1 Jalapeno pepper (seeds removed) diced
1/4 cup of chopped red onion
1 Tbsp of Olive Oil
The juice of two limes
2 tsp of Chopped fresh cilantro
1 large tomato chopped
Salt and pepper
Directions:
Toss all ingredients in a medium bowl and chill for and hour.



Pork Loin Skillet Dish



4 boneless pork loins or cut bone out
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow bell pepper
1/2 orange bell pepper
2 tablespoons EVOO = Extra Virgin Olive oil
1 1/3 cup orange juice
1 1/3 cup Barbecue sauce I use Baby Rays
2 Tablespoons prepared Dijon Style mustard


Use mallet and beat the loin I use zip lock bag and cutting board and try to beat the loin to 1/4 inch- This makes it tender..
place sliced peppers on top of meat and roll meat up like jelly roll and use tooth pick to hold in place

Heat oil in heavy skillet I used a cast iron skillet..once oil is hot place meat rolls in and brown on all sides. Turn with tongs. once browned drain oil off .

mix orange juice and Barbecue sauce and mustard all together and poor in pan bring to boil then cover and simmer for 12 to 20 minutes until meat is tender.

This is very tender and please remember to remove the toothpicks before serving.

Easy Camp Stew

Easy Camp Stew 

1 container Lloyd's barbecued chicken (can use another brand, that's just what I use, it is found in the meat section of my local grocery store)
1 container Lloyd's barbecued beef 
1 container LLoyd's barbecued pork 
6-8 medium potatoes, peeled and cubed
2 15 ounce cans whole kernel corn, drained
2 28 ounce cans crushed tomatoes
1 16 ounce bag frozen butter beans, cooked a
2 teaspoons Worcestershire sauce or to taste
3 -5 tablespoons ketchup
1 small onion chopped
Directions
Cook butterbeans while peeling potatoes.
Place all ingredients in pot large enough to hold it all, it should all fit in a 4 quart
Cook on medium for 30 minutes to 1 hours or until potatoes are done.
